I have always found that it’s takes lot more effort to make the vegetarian food taste good compared to meat dishes. And that’s reason why the Indian food uses such a large variety of ingredients. Even the simplest of dishes (or what Indians think of as simple!) has a minimum of ten spices and herbs! They add a complexity of flavour to the food. This is also the reason why Indian dishes are always accompanied with an array of chutneys, pickles and salads.
My mom made numerous chutneys and pickles at home. While I liked eating them all, my two absolute favourites have always been the coriander chutney and the mango chutney and still are. While I would recommend all the recipes for making chutneys and jams in our collection , I encourage you try these two recipes at a minimum.
