Bircher muesli is a Swiss recipe for making delicious oats for breakfast. I had the bircher muesli for the first time when I went on a ski trip in Austria but I rediscovered it recently on my ski trip to Switzerland. Not only is this recipe for making bircher muesli gorgeously tasty but it is also chock-a-block with good stuff. Those of you who are hoping to shed few extra pounds but if, like me, you love love love food, this is the recipe for you. It’s super easy to make and it keeps well in the fridge for couple of days.
- 1 cup oats thick steel cut kind are better
- 1-1.5 cups apple juice cloudy preferably if you can find it but clear is ok too
- 1 cup plain yogurt or coconut milk yogurt for vegan option
- 1 fresh apple grated, with the skin
- 1/2 cup blueberries
- 1/2 cup raspberries
- 2-3 tbsp seeds pumpkin, flax, chia (or any of your choice)
- 2-3 tbsp almonds or cashew or both whole or crushed
- 2-3 dry apricots chopped (optional)
- 1 tbsp goji berries optional
- Mix all of the ingredients together but keep few berries aside for garnishing
- Pour the mixture in a glass jar or a bowl and leave it overnight in the fridge.
- You can change the ratio of the ingredients depending on your taste.
- Garnish with fresh blueberries and raspberries or any fruit of your choice before serving. Serve with coffee.
